CASAR DE BURBIA S.L.’s project “Comparative Studies to Define an Optimal Methodology to Work on Lees in Godello and Mencía in the Bierzo D.O.” with file number IDI-20150739 was completed successfully thanks to the support obtained from the European Regional Development Fund (ERDF), the European Union and the Centre for the Development of Industrial Technology (CDTI), with its partially refundable subsidy of €197,334.30.

This project’s main objective was to determine the quality of the wine’s own lees and their suitability for use during the winery‘s crianza process and ageing.

This project aimed to develop a new line of work to improve the wines of the El Bierzo Denomination of Origin in the Godello and Mencía varieties, as well as enhance their aromatic component and gain more knowledge about the microbiological state of the lees, developing a suitable oenological procedure to monitor them and minimise the process’s microbiological risks.
